eing surrounded by apple orchard after apple orchard in this part of Michigan, you’d think apple pies would almost be a main course here! Well, I will let you in on a secret. Until a few days ago, I had never made an apple pie from scratch. Actually, I had never made a full pie, with a from-scratch-crust before. Nope – never. My mom always said pies were so hard to make that she rarely made them. My mother-in-law makes beautiful pies – the kind that could win at every state fair if she’d enter one. But, we were given bags full of apples. My husband commented on how he wished he could have one of his grandmother’s apple pies. He was having a rough day with a customer, so I told the kids, "Let’s surprise daddy and make an apple pie." I prayed that it was not too much of a surprise – one that would turn out horrible and would make his face wince even more! I couldn’t cheat with premade pie crusts and canned applie pie filling. We didn’t have any. So, we made apple pie, and though it was nothing like his mom’s, it was very eatable, and they are all asking when we are going to make it again.
Since the Make It From Scratch challenge for next Monday "is to make something you never have before", my apple pie qualifies! It’s simple – nothing elaborate about this pie – and I am sure there are better ones out there. But, it’s my first, and it put a big smile on my husband’s face . . . and my kid’s too – and yes, even me. (Maybe I should call it Humble Apple Pie!)
Crust (it really was easy!)
Place flour and salt in bowl – cut in butter (TB sizes) until resembles a coarse meal. Add egg and water, stiring mixture with fork to make the dough. Add a little more water if it’s too dry. (I did not need to). Divide into 2 balls – wrap each in plastic and chill for 30 minutes. Makes two pie crusts.
Apple Pie
Peel and slice apples. Add lemon juice and toss. Sprinkle a small amount of sugar and cinnamon in bottom of crust. Add 1 tablespoon of corn starch. Put half of apple slices in crust. Add half of sugar, cinnamon, nutmeg and 1 tablespoon corn starch, sprinkling over top of apples. Repeat layering of apples, sugar, cinnamon, nutmeg and cornstarch. Apples will pile high in pie crust. Dot with butter. Top apples with second crust and seal (pinch) crusts together. Cut vents in top. Bake 50 to 60 minutes or until done. ENJOY!

should have known, when my laptop was taking 20 minutes to just come on. My husband tried everything, and it just kept locking up and programs would not work. So we had to do a full restore on the computer. It’s pretty bare now. All my pictures, digital programs, homeschool downloads (the kids are thrilled) and all my e-mail address – GONE! It’s still slow, and as of right now we cannot get the modem to work. My DH thinks the harddrive is about shot. We’ve only had this laptop just over a year (but only paid $500 for it). It’s still quite the bummer.
Well, in case you e-mailed me in the last day, your e-mail "was" sitting on my laptop, and now is vanished. So, I really am not ignoring you. I just can’t remember who I was suppose to respond back to, and even if I could, my brain’s computer does not remember e-mail addresses!
P.S. – Is there a company out there that would like me to do a review on a shinny new laptop?!?!?

Do you remember this song from Sunday School, or maybe your children now sing it?

So often we try to "figure God out". Why would He do that? Why would He allow this to happen? Why doesn’t He answer my prayers the way I "need" them answered? Though I don’t believe it is wrong to ask God "why" because through so many of life’s exerpiences He can grow us and show us the whys. We can learn, grow, and share with others. Yet, possibly even more of life’s experiences we will never understand, and that is where our child-like faith has to step in, and we let go, and let God. Yes, easier said than done.~ Scripture continually tells us there is no one like God:
"There is no one holy like the LORD, Indeed, there is no one besides You, Nor is there any rock like our God." I Samuel 2:2
". . . For I am God and not man, the Holy One in your midst . . . " Hosea 11:9
"Many, O LORD my God, are the wonders which You have done, And Your thoughts toward us; There is none to compare with You. If I would declare and speak of them, They would be too numerous to count." Psalm 40:5
"Who is like You among the gods, O LORD? Who is like You, majestic in holiness, Awesome in praises, working wonders?" Exodus 15:11
" ‘ To whom then will you liken Me – That I would be his equal?" says the Holy One." Isaiah 40:25
Do we sometimes grow so accustomed in our Christian walk that we forget God’s holiness, His awesomeness, His sinlessness . . . that we even forget to kneel before Him in our thoughts. Is He just another "Person" in our minds – and not GOD? ~How many times as a child did we hear, "Because I am the mom, THAT’S WHY!" God’s ways are not our ways – His plans not our plans, and though it may be so hard to accept at times, we need that faith of a musterd seed to just accept and allow God to be God – because He IS God.
"For My thoughts are not your thoughts,
Nor are your ways My ways," declares the LORD.
"For as the heavens are higher than the earth,
So are My ways higher than your ways
And My thoughts than your thoughts."Isaiah 55:8-9

his is an excellent book I highly recommend for Christian homes, incorporating into your family devotions or homeschooling. His Loving Law, Our Lasting Legacy: Living the Ten Commandments and Giving Them to Our Children, by Jani Ortlund, is an easy to read book of 163 pages, with each chapter being about one of the ten commandments. Within each chapter Mrs. Ortlund beautifully writes a section on "His Loving Law" discussing the commandment and then another section, "Our Lasting Legacy" and how to apply it not only in our lives but how we can share it with our children, to pass down this heritage for generations to come. At the end of each chapter are questions for the adult, applying it to our lives, and then another set of questions and activities to do with children in applying that commandment in their lives and memory. One of incentives for Mrs. Ortland to write this book is to help us
"make it our goal to both inform and influence your children with your own delight in following Christ."
Nancy Guthrie (author of Holding On to Hope and Hoping for Something Better) eloquently shares about this book on the back cover:
“Jani Ortlund blows the dust off the stone tablets of the Ten Commandments.
